For usability, some basic JavaScript can do it:

For animation, you can go with the GIF standard, but most people nowadays are trying to move away from it, because of patenting issues. PNG is starting to add animation support, but it is a work in progress. Animation can be seen as a usability technique, in which case, JavaScript can be used, but it can also be seen as an interactivity issue (so that the animation stops when the user stops looking at the page.)

For interactivity, JavaScript can give some good results, but Java and Flash are both good ways to go. I don’t have a good Flash resource yet, but for Java:

Sorry about the sloppy language ^_^; I was kind of writing this in a hurry, but I hope that it helps!

Generally speaking, AJAX and JavaScript are used to create an interactive web site.

AJAX is a technology that sends requests to your server and allows the browser to receive a response without reloading a page.

jQuery is an excellent library built on top of JavaScript, and there are some excellent examples on the web. It simplifies AJAX calls and can easily animate your web site (drop down menus, sliding elemtns, fade effects, etc.). As an example, check out jQuery Tools: http://flowplayer.org/tools/demos/index.html
